Another benefit of doing 2 parts sugar instead, it will make your syrup shelf stable. Much better to go that way.

great video, but I must disagree with how long you say simple syrup lasts for. Simple syrup is shelf stable. it's too toxic( sweet) for bacterial and other bad things to grown in. you actually have months w/o refrigeration before it goes bad

I really like your videos, however…this video is kind of a minor flaw. Simple syrup is done better with no heat. If you just wisk it at room temperature and let it sit over night then you don’t cook off any water and you don’t darken the sugar. Measured ingredients are easy to get right but measured ingredients over constant low heat for a set amount of time is easy to get wrong. The second minor flaw that I think you made is 1/1/1 for your sour mix. That’s a little too sour in my experience and since the simple syrup is actually one half part sugar it’s actually .5/1/1 so I think the better ratio is 8/3/3 with 3 dashes of angostura per 2oz of mixture. That makes one cocktail equal 1oz simple, 3/8oz lemon, 3/8oz lime (or more simply 3/4oz of mixed lemon and lime juice) and 3 dashes angostura bitters. Also most people don’t realize that fresh squeezed citrus juice gets more tart over time so I find it better albeit slower to squeeze daily and not let it sit in the fridge too long. Not hating on you at all, just an experienced opinion.
For whatever reason, this reminds me of making potions in Minecraft. Like, the simple syrup is the awkward potion lol.

One minor correction: Grade B maple syrup doesn’t exist anymore. The US and Canada eliminated the letter grades a number of years ago; a lot of people thought the grades had to do with quality/purity, when it was actually strength and color. Nowadays maple syrup is graded Golden, Amber, Dark and Very Dark. You’re probably aiming to use Amber; it’s easy to find and it’s versatile enough for both pancakes and cocktails. Golden is also easy to find, and is great on breakfast foods, but is often too delicate to stand out in a drink.
