I have a big smile on my face! I just made this and gorged on it. It was DELICIOUS! I just didn't include meat. I'm NOT a vegan, I just didn't have any meat on hand and I didn't feel like going out to buy it. But even without meat, this was still delicious!

I finally made this easy version of japchae and it's so yummy even without the meat. I made the traditional recipe before and it's also delicious but very hard to cook
I have made your recipe japchae during the pandemic when everything was shut down. Very delicious! Since this is much less time to cook I want to will make this for my family for thanksgiving.

I noticed that a lot of chefs say if you’re vegetarian just skip this part when it comes to the meat. But you actually can’t do that because the meat has juice and more importantly with pork it has fat. So you need to balance the flavor and I don’t think a lot of people know how to do that. maybe you can add

But I have a question: Can the egg mold in 1 day? Because I prepared this yesterday and today the egg had green-black ish spots and I'm not sure if the spinach just recoloured it or if it's mold xD
8oz pork belly – match sticks
2tsp sugar
2tsp soy sauce
1tsp sesame oil
Set aside to marinate
2 eggs pinch salt through fine mesh sieve make omelette nonstick skillet low heat
Cook marinated pork belly 4-5min
1/4c soy sauce
3TBSP BROWN SUGAR
5 garlic minced
Black pepper
Mix and set aside
Woodear mushrooms soak 30min cold water remove stem and chop – add to stock pot
8oz potato starch noodles soak cold water 40min – drain and cut scissors
1 large carrot match sticks
8oz onion – slice
8oz mushrooms any you want – chop (king oyster)
1/4c veg oil to stock pot
1/4c water
Mix
On top of veggie sub pot add 8oz 1 bunch spinach
Put the noodles on top and pour over seasoning sauce
Cover and cook 10min medium heat
Slice egg omelette
Can someone please guide me. Can i use rice noodles for this recipe?
Hi Maangchi, I hv a question – I hv tried this easy japchae recipe twice, always turns out nice – however I find that the noodles tend to clump together after soaking in cold water for 40 mins as advised – versus when I used your earlier recipe of boiling the noodles, the noodles turn out perfect… kindly advise if I shd soak the noodles for shorter period of time?
