For the crust, you also can use potatoes cut relatively thick, like 1/3 inch or so the result is phenomenal

We dont add cumin .. seldom you see cumin in rice .. we add saffron .. persian authentic rice, for tahdig we add one egg yolk to yogurt plus brewed saffron and butter
Khareji Make rice our way and mess it up the most.
As a Persian, I would not recommend this recipe.

I was following a recipe that gave instructions how to create this. It would have turned out perfect if I remembered to turn the burner off. With the rest of the flavors in the dish, the burnt rice wasn’t noticeable at least. Tahdiq fail.
No saffron? If any of you make this, mix saffron with a little hot water and add on top. Gets even better.
I am pretty sure this is not how to make Persian rice. This is too complicated. I would rather eat a banana instead.

What a waste of water. Wash in a bowl and use your hand to massage it for about 30 seconds and empty then repeat until it goes clear …usually only 3 to 4 rounds and uses way less water and cleans the rice more Thoroughly

Is this the new format for America's Test Kitchen? Could it be any more "flat line" or boring? Might as well go to Wikipedia or Google the recipe. This is not the content (the most complicated "simple" rice dish ever) or presentation style that I've come to ATK for. Someone want to check these narrators to see if they even have a pulse?
