No, no, no. Here's how to get perfect coffee every time:
1) Grind the coffee to medium-fine. Bialetti says medium-fine is the correct grind for the moka pot.
2) Do not fill it with boiling water! Bialetti says to use cold water, but you can use room temperature water.
3) Fill with medium-fine coffee, but don't press it down.
4) Set the moka pot on LOW heat and leave the lid CLOSED!
5) The coffee will quietly seep into the upper chamber with the lid closed.
6) As soon as you hear a gurgling noise, turn off the gas heat or remove the pot from your electric stove. But do NOT cool off the pot with water!
7) Let the pot rest for a minute to finish filling.
8) Open the lid and stir the coffee.
9) Immediately pour into your cup or your glass of hot milk.

That coffee was way too coarse. You can see it in the sputtering at the end. That should not happen with the right grind size

If I use hot water the coffee turns out sour. Maybe the result is okay if you grind it so coarsely but you're loosing out on a lot of flavor imo.

You DONT want water gushing through the mocha pot like that. Very poor technique!
The problem I see by heating water first and then pouring the boiling water in the bottom chamber, then putting the moka pot on medium heat, is you don't know how hot the water is. So you're likely to over boil the coffee beans; which might come out bitter. And giving how small you're grinding the beans, you can easily heat them and extract the beans—boiling them too high in temperature.
