My mate in secondary school his dad made us this once never seen it since he was from Iran the food was always amazing apart from this rice in leaf thing they made me eat once that was nasty lol but this rice and saffron chicken was amazing

I was always taught to not pre wash the rice, wash it with cold water once parboiled and should help not to burn it. Also I believe the name / pronunciation derives from the noise it makes when its eaten ; )

Hello chef! I am Persian and I have a few tips for you!
1) grind the saffron and dissolve it in water or oil. then splash it in around the rice instead of putting whole pieces on the bottom
2) there are many variations of tahdeeg, and one of my favorites is my aunt's who puts thin sliced potatoes on the bottom too
3) Tahdeeg literally means bottom of the pot. Tah is "bottom" or "end" and deeg is a type of large pot! Also, tahdeeg only refers to the crispy bit. The rest is just rice
4) some ladies I know don't wash the rice in order to keep it tight and starchy (which helps the tahdeeg with it's crispiness)

This is called Concon in spanish you do not need butter to make it simply the oil added in the eater mixture. The butter will butter the rice the oil will make it crispy.
I've unintentionally made this a few times lol I'm not a huge fan but it's not horrible.
I love this. I think it's so valuable to see great chef's trying new things and not being perfect all of the time. Makes it feel more realistic on trying new recipes and not being afraid to fail. Thanks for all of your videos, they make me excited to cook new recipes!

I burnt rice at school a few times, I had a hard time in the beginning how much to Much to make, plus I would make to much because I didn’t want to run out when you have 80 students to feed and your cook, server and cleaner.
very nice. a rice cooker will also get it done, but the manual version where it turns thick is heavenly. If you put bread or potato at the bottom that is also amazing
This dish is really disappointing. The flavour is only in the crispy rice. So it’s pretty bland.
