No vinegar, just the juice of a lemon (from Menton if possible)…

That's French Potato Salad? My mother was making that for years and we never called it that!! It was just potatoes with butter and parsley!! It's delicious!!

Yes Julia Child "don't care" about chickens but she did eventually care about calves once she saw how they were horribly treated in the meat industry thanks to John Robins and she said no more veal.

Lmfao, That was so entertaining. I am the salad Chef at a camp of 1000 people and this salads works great on a large scale. I make 6 platters of course but the the visual effect is not lost. Thanks for sharing.

Don't forget the anchovies, and just like the fresh and fine oil that JC recommends, use a fresh can of anchovies too.

That's a tough one! I think you'll miss the flavor a bit but I've read that a tiny bit of horseradish can be a good sub for mustard (never tried it) and as for the emulsification, you could also use a bit of mayonnaise in its place. Hope this helps – would love to know what you come up with 🙂
I'm making this this weekend. Mustard is out of stock in my local supermarket. Can I just leave it out and use extra shaking muscle? I know it acts as elmusifier, any substitutes?
