By the way you are supposed to pour beer to have a head on it. Quick experiment pour a Bud Light into a glass the way you would smoothly with no head. Then pour one quickly yes takes a few more seconds but if you pour it aggressively it gets ahead the head dissipates and you fill it. Then it's done but then take just a tissue roll the tissue the long way like a log not a ball. Then just dip it into the beer 3 or 4 times quickly if you do the one that you poured gently it will overflow and bubble drastically. That's what it's doing in your stomach. Now you take the one you with the abit of head dip it in aggressive and it will barely bubble not close to overflowing. That's what that's what that's doing in your stomach. You obviously have never been to a bar that serve proper Guinness. If you have and if you watched the bartender tap your Guinness, you would see it takes at least 2-5 minutes before you get your beer. That is the proper way to tap a Guinness.

The bubbles don't sink in those glasses. It looks like they do. But what's really happening is the liquid is sinking down while the gas bursts out and upwards simultaneously. That's why Guinness is so specific about heo to pour their beers at 45° because if you don't it will be flat before you finish it. Because nitrous bubbles are much smaller than carbonation bubbles.

the center of the liquid column is rising, the outer edge is sinking. big bubbles are moving up in the center, small ones get pushed down at the edge. the main difference to bubbly water is the higher viscosity of the beer, and it may also be more carbonated than the water. certainly beer tends to form and hold smaller bubbles.
The bubbles aren't sinking… They are rising, and therefore the black bits between the bubbles appear to be sinking, hence you see a downwards movement
To my eyes it's the fluid sinking, not the bubbles…so with the right type of glass I think the fluid is restricted more as it passes through the forming bubbles…
I pour Guinness like that deliberately. I like the taste of the foam. Also Guinness is way better right after the pour. It loses that initial flavor after about 30 seconds

I always thought it was a optical illusion caused by the bubbles trapped in the falling liquid. BTW the first pour was the correct way and you are supposed to drink it during the cascade, which tastes lighter and creamy. Think I might go drink one now.

It's because the surrounding liquid is thicker than the viscosity of water allowing in the bubbles once they rise to sink down instead of coming to the top and foaming has to do with the chemical composition as well as the shape of the glass

Maybe you should do enough research to know what gas the bubbles are before recording a minute-long clip. Or, put enough effort in to record it again when you make a mistake.
It's a cylindrical eruption flowing from the centre, back down into the sides, like a backwards bell siphon. It's basically gaseous rain in a beverage.
