Definitely, some people don't understand what is a restaurant business. First, at a fancy restaurant, most of the time what customers are paying for is the experience. Then comes another thing which is the business doesn't make much profit at the end of the day even if prices are set like that. In this industry most restaurant just survives and just a few those grow or expand. There are some "critics" who often I see talking about the price at a fancy restaurant. for me is clear that some don't know the industry and culture, because there are two faces in this industry, the front, and the back face but a lot of people don't or care about the back face of the hard-working and low paid staff. And for some businesses do this "sneaky scamming" to be able to over their staff a better opportunity for themselves to make a little profit at the end of the day after covering expenses, food cost, and losses.
I have known it for years! Restaurants is one of the biggest scams out there. Not only you are being overcharged. You have no clue what they put in your food. Most of the places will use the cheapest possible ingredients that will wreck your health.

After years, I came to realize as a young gourmet that restaurants, no matter how fancy they are, care nothing about your food or your dining experience. They just pull tricks to get more money out of your pocket. No one cares more about the quality of my food than I do. That’s why I spent so much time on improving my cooking skill, and became a good amateur chef. When I cook for myself, I could spend like 100 bucks on raw ingredients and hours of work to bring every detail to perfection, just for a single dish—that’s the kind of service I won’t get from anyone or any restaurant except myself.
I was all prepared to argue with this video but many of the things are on the money. What I will take umbrage is are the hidden costs of things you don't consider. Restaurants pay for space. That cost has to be gotten somehow. The biggest profit center is usually alcohol so although you may spend four times the cost for a bottle of wine the cost to the restaurant for proper storage hasn't been factored in. Is there a sommelier? How about his cost. Where I used to work we used to have a dessert serve with a port wine reduction. The bottle we chose for quality was about $20 to the restaurant. After I treated and reduced it I filled a one pint squeeze bottle with it. I would get about 100 servings at best which is basically 20 cents per dish. It wasn't needed, but it did make it "fancier". Some sauces are inexpensive to make, some are not. A ptarmigan cream sauce could be made with parmagiana reggiano if it is upscale or perhaps grana padano if it is really upscale! Hidden cost. Those cheeses have rinds that are good for nothing but you pay for it in the price. No one usually gets rich owning one restaurant.

It's not just posh restaurants. My local chippy charges £2 for a portion of chips I could do at home for 15p. I don't mind a fair mark-up, but come on…! Likewise the fish itself. I can get an equivalent fillet already battered at my supermarket for £1.50. The chippy want to charge me £9 for fish, chips and mushy peas. There's a local burger bar that offers `fancy' burgers for £10. The burgers are made from unicorn meat, theyy've got some sort of exotic cheese, onions grown on Mars and such a kaleidoscope of spices that it would take longer to read the contents than eat the burger. Recently, I got a flyer from Pizza Hut regarding their "Christmas Feast" It basically entailed 3 large pizzas, a bag of chips, a salad and a bottle of pop. Price? A gobstopping £35..!! And who wants to eat bloody pizzas at Christmas anyway? You can get a single equivalent frozen pizza from Aldi for 89p…I've been amazed at the roaring trade outfits like Deliveroo and Just Eat have been doing since covid. Scooters are whizzing about everywhere. A lot of people have a lot more money than sense, it seems…

Restaurants are just like Retail Businesses. There’s cost of goods,mark up,labour and profit margin.
Deceiving advertising/practices is everywhere however educate yourself and let the buyer beware.
Remember you get what you pay for and if something seems to good to be true, it usually is.
The food industry is rigged with scams more then the financial industry

that's why I'm trying to avoid ordering sushi rolls that are "spicy" or have ton of sauce on them, spice in my mind is covering not fresh fish, and looks like i am right.

I hate those stupid meaningless words they use on menus or in the recited waiter's speech about the specials. Seriously, every time I see something that says "cooked to perfection" on the menu, I think… As compared to… "Cooked not so perfectly" or "cooked to acceptable levels"?
As for "sourced from local organic farms", that just means "we get to charge you more for no real reason as it actually doesn't cost us anymore to buy these things but it just sounds so hip and feels good."
On the wine thing wine could be high in price due the fact once you open a bottle you cannot store it. Though it can be used as cooking wine but they are losing dollars if they are selling it at normal price. Then you have to think about the shipping cost from the vendors. And it is marked up the restaurant can profit and replace the bottle used. Other than that the video was pretty informative

Look, if you just wanted good food, you'd put on your jeans and go down to the docks, eating at a greasy spoon some of the best catch of the day. No, we go to swanky places knowing we're paying a fortune for the 'atmosphere', the red and the white wine sommelier, and the swell dessert cart with all of those open package Hostess treats. If you want haute cuisine, order it by mail and finish it yourself. These places are 100% to impress clients, expensive dates, etc…PS: they jack up all prices, but they really really want you to drink…a lot…

20 years in the business, yes good food is important, but you must realize most are there for the "experience" not the value claim.
In summary; dont buy alcohol, sneak it in somehow. Dont buy appetizers, make a quick snack at home before you go. And dont buy dessert. Pick something up elsewhere or just eat that bucket of ice cream you have at home.
Ok most all of these are true but the wine price one is necessary bc if you sell wine by glass and open a bottle for a table but only sell a single glass out of it, they wouldn’t lose money if they didn’t charge the cost of the bottle for a glass. If they didn’t do this then most bottles opened would cost them money. If this still pisses you off, never order rail liquor
That why sit down restaurants aren't making it during COVID. All the profit is in bar drinks. The profit margin on the food is small in comparison.
They really don’t understand why wine is marked up. When you calculate the overhead and alcohol license, you’re already halfway.

This is why I buy meat from one butcher, don't drink wine, and I cook more than 95% of my meals. Eating out is overrated.
